- 3 avocados (somewhat hard with a light softness)
- 1 heirloom tomato (diced)
- 1 bunch cilantro
- 1 block Panella cheese (cubed)
- 1/2 cup of green onions (diced)
- 4 limes
- salt and pepper to taste

- Half all the avocados and scoop out all the halves with a spoon. Very important to not get overly ripe or super-soft avocados.
- Slice the avocado in half to make the width of the cubes smaller. Then cube each half and place in a bowl.
- Add the diced tomato, chopped cilantro, green onions, cubed cheese, lime juice, salt, and pepper. Mix everything together very delicately being mindful to not turn it into guac.
- Add jalapenos or anything else in that tickels your fancy.
