GF Eggs Benedict

Ingredients

The Hollandaise
  • 4 egg yolks
  • 1/4 cup lemon juice
  • 1 tsp orange juice
  • 1/2 cup of unsalted butter
  • 1 tsp paprika
  • salt & pepper to taste
The Eggs N
  • Poached or Fried Eggs (Quantity varies on the number of people eating)
  • 2 medium potatoes (diced)
  • 1 cup of spinach
  • 1 cup of mushrooms (thinly sliced)
  • 1/2 red bell pepper (julienne cut)
  • 1/2 white onion (julienne cut)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt & pepper to taste

Instructions

The Hollandaise
  1. Melt the butter over low heat and pour into a cup or measuring cup and place to the side
  2. Fill a large stove pot with water and begin to heat over medium flame
  3. Place the egg yolks and lemon juice together in a large stainless steel mixing bowl. Whisk together with an electric or handheld whisk and vigorously whisk together until the liquid doubles in volume and has a light foam layer on top.
  4. Place the bowl over the large stove pot and make sure the water is not at a roaring boil and more of a simmer or light boil. Be sure that the bottom of the bowl is not touching the water. Getting the egg mixture too hot will scramble the eggs.
  5. Slowly drizzle in the butter as you continue to whisk rapidly. Do not stop whisking from start to finish to ensure the texture of your hollandaise is on point. Once the butter is all in continue to whisk until the sauce thickens and doubles in size. Whisk in salt, pepper, and spices.
  6. If your sauce becomes too thick you can loosen it with more lemon juice or a few drops of water. Be sure to store in a warm place before serving & whisking from time to time to keep the consistency on point while you prepare the hash.
The Eggs N
  1. Heat a skillet and dump diced potatoes in. Once they begin to soften add in the onions and cook them down until they are translucent and beginning to carmelize
  2. Now add in the mushroom and bell pepper and when they begin to soften add the spinach. Add spices I recommend or any of your choosing be sure to salt and pepper to taste. Cut the heat and leave in the skillet and place to the side with a lid on.
  3. If you choose fried over poached eggs this is the time to cook those. If you chose poached follow this recipe.
  4. Now that everything is ready lets assemble. Place a scoop of the hash mixture on the plate, now the eggs, now ladle as much or little hollandaise as you would like over the top. Im a slut for sauce so i like my sauce covering everything.
  5. You can always add meat or any other veggies you want to this recipe and let your creativity soar.
