My absolute favorite chilli recipe.

Ingredients

Gather The Ingredients
  • 1 16 oz packet of beyond meat or 4 beyond meat patties
  • 2 tbsp avocado oil
  • 1 red onion (small diced)
  • 2 cloves of minced garlic
  • 1 can of plain tomato sauce
  • 1 can of diced tomatoes
  • 4 tablespoons chili powder
  • 1 tablespoon chipotle powder
  • 1 tbsp coriander
  • 1 tsp Cayenne (can add more depending on you like your spice)
  • 3 tablespoons smoked paprika
  • 2 tablespoons onion powder
  • 2 stalks of celery (finely chopped)
  • 1 carrot (small diced)
  • 1 green bell pepper (small diced)
  • 1 can of mixed chili beans (1 can of kidney if can't find that)
  • 1 can of corn (or 1 bag of frozen corn)
  • 4 cups vegetable stock
  • Juice of 2 lemons
  • Salt & pepper to taste
  • 1 avocado
  • Vegan or Regular Sour Cream
  • Cilantro

Instructions

Lets Make It
  1. In a medium to a large stockpot add the onions and the avocado oil. Cook the onions down until they are translucent.
  2. Then add the beyond meat, garlic, all spices, salt, pepper, & tomato sauce. Using a spoon or spatula break the beyond meat up so that it turns into chunks or crumbles. Stir everything together and put a lid on. Stirring every two minutes or so for about 10 minutes or until the beyond meat is cooked.
  3. Add the stock, lemon juice, carrots, celery, bell pepper, and a can of chopped tomatoes.
  4. Cover with a lid and turn the heat down to a simmer for about 20-25 minutes or until the carrots become soft. The longer you let it simmer the better it will be. If I have time I leave it for 45 minutes on low. Taste to be sure you have enough salt, pepper, and spice. Add more chili & paprika spice if you want more flavoring.
  5. While the chili is cooking dice up one avocado, and roughly chop your cilantro.
  6. Serve your chili in a bowl and top with avocado, sour cream, and cilantro. You can also make some brown rice or white rice to serve with your chili.
