Ground Pork & Whipped Ricotta Lasagna Soup
This is the sexiest soup recipe I have. You can use any ground meat for this recipe including plant-based brandsYou can use regular store-bought ricotta if you don't want to make it whipped.I like using fresh mozzarella for the top.

Ingredients
The Soup
- ½ a white onion diced
- 2 cloves crushed garlic
- 2 springs thyme finely chopped
- 2 sprigs oregano finely chopped
- 2 tbsp of tomato paste
- 1 lb of ground pork
- 1 stem celery (diced)
- 4 cups beef broth (can use broth of choice)
- 1 Large can of crushed tomatoes
- 2 bay leaves
- ½ Box of lasagne pasta sheets (broken up)
- ½ Cup spinach leaves (roughly chopped )
- 1 Can diced tomatoes
- Salt & pepper to taste
Whipped Ricotta
- 1 Container of ricotta
- ¼ Cup buttermilk (can use cream or regular milk)
- Juice of ½ a lemon
- ¼ cup chopped parsley
- 1 tbsp olive oil
- 1tsp salt
Instructions
Step 1
- Add the below ingredients to a large pot on low-medium heat with ghee or olive oil. Cooking for about 3 minutes or until the onion become translucent
- ½ a white onion diced
- 2 cloves crushed garlic
- 2 springs thyme finely chopped
- 2 sprigs oregano finely chopped
Step 2
- Add the below ingredients to the pot. Breaking up the ground pork and giving everything a mix. Once the pork breaks up and begins to cook move on to step 3
- 2 tbsp of tomato paste
- 1 lb of ground pork
Step 3
- Add the below ingredients to the pot and let cook at a simmer for about 15 minutes with the lid on. Once this step is complete move on to the whipped ricotta while the soup simmers.
- 1 stem celery (diced)
- 4 cups beef broth (can use broth of choice)
- 1 Large can of crushed tomatoes
- 2 bay leaves
- Salt & Pepper to taste
Step 4
- Add the below ingredients to the pot to finish the soup. Once the lasagne is soft the soup is ready.
- ¼ cup of ricotta mixture
- ½ Box of lasagna pasta sheets (broken up)
- ½ Cup spinach leaves (roughly chopped )
- 1 Can diced tomatoes
- Salt and pepper to taste
- Serve it up!
- Add your ricotta mixture, mozzarella, parsley, olive oil, salt and pepper to the top and enjoy!
Whipped Ricotta
- While the soup is cooking add the following to a food processor and whip until you get a creamy smooth texture.
- 1 Container of ricotta
- ¼ Cup buttermilk (can use cream or regular milk)
- Juice of ½ a lemon
- ¼ cup chopped parsley
- 1 tbsp olive oil
- 1tsp salt
