Ground Pork & Whipped Ricotta Lasagna Soup

This is the sexiest soup recipe I have. You can use any ground meat for this recipe including plant-based brandsYou can use regular store-bought ricotta if you don't want to make it whipped.I like using fresh mozzarella for the top.

Ingredients

The Soup
  • ½ a white onion diced
  • 2 cloves crushed garlic
  • 2 springs thyme finely chopped
  • 2 sprigs oregano finely chopped
  • 2 tbsp of tomato paste
  • 1 lb of ground pork
  • 1 stem celery (diced)
  • 4 cups beef broth (can use broth of choice)
  • 1 Large can of crushed tomatoes
  • 2 bay leaves
  • ½ Box of lasagne pasta sheets (broken up)
  • ½ Cup spinach leaves (roughly chopped )
  • 1 Can diced tomatoes
  • Salt & pepper to taste
Whipped Ricotta
  • 1 Container of ricotta
  • ¼ Cup buttermilk (can use cream or regular milk)
  • Juice of ½ a lemon
  • ¼ cup chopped parsley
  • 1 tbsp olive oil
  • 1tsp salt

Instructions

Step 1
  1. Add the below ingredients to a large pot on low-medium heat with ghee or olive oil. Cooking for about 3 minutes or until the onion become translucent
  2. ½ a white onion diced
  3. 2 cloves crushed garlic
  4. 2 springs thyme finely chopped
  5. 2 sprigs oregano finely chopped
Step 2
  1. Add the below ingredients to the pot. Breaking up the ground pork and giving everything a mix. Once the pork breaks up and begins to cook move on to step 3
  2. 2 tbsp of tomato paste
  3. 1 lb of ground pork
Step 3
  1. Add the below ingredients to the pot and let cook at a simmer for about 15 minutes with the lid on. Once this step is complete move on to the whipped ricotta while the soup simmers.
  2. 1 stem celery (diced)
  3. 4 cups beef broth (can use broth of choice)
  4. 1 Large can of crushed tomatoes
  5. 2 bay leaves
  6. Salt & Pepper to taste
Step 4
  1. Add the below ingredients to the pot to finish the soup. Once the lasagne is soft the soup is ready.
  2. ¼ cup of ricotta mixture
  3. ½ Box of lasagna pasta sheets (broken up)
  4. ½ Cup spinach leaves (roughly chopped )
  5. 1 Can diced tomatoes
  6. Salt and pepper to taste
  7. Serve it up!
  8. Add your ricotta mixture, mozzarella, parsley, olive oil, salt and pepper to the top and enjoy!
Whipped Ricotta
  1. While the soup is cooking add the following to a food processor and whip until you get a creamy smooth texture.
  2. 1 Container of ricotta
  3. ¼ Cup buttermilk (can use cream or regular milk)
  4. Juice of ½ a lemon
  5. ¼ cup chopped parsley
  6. 1 tbsp olive oil
  7. 1tsp salt
